- 2 cups red lentils
- 1 teaspoon turmeric powder
- one teaspoon of coconut oil
- 1 ½ teaspoon of cinnamon
- 2 apples, grated
- 1 ½ cup of coconut milk
- one onion, diced
- 1 teaspoon of salt
- one teaspoon of cumin
- 2 or 3 cups of hot water
How to prepare it:
Melt the coconut oil in the pot while rinsing the red lentils with cold water. Let them drain for a while, and in the meantime, put the onions in the pot. Next, you should add the turmeric and apples. Cook everything for 2 minutes, stirring frequently. Afterwards add the water and the drained lentils. Cover the pot and let the mixture boil for 15 minutes.
Next, add the spices and the coconut milk and simmer just until the lentils are soft enough. If you want them softer, add another cup of water and let the soup simmer for ½ – 2 hours.
