Great for your coffee, cereals… Yummy! Making them may seem so difficult, but it turns out, it’s really not.
First, let’s talk about almonds. How healthy they are? A lot! They are high in monounsaturated fat, so they lower heart diseases risk. They are full with vitamins, as well. Vitamin E, magnesium, potassium are just a few many. Almonds are of great help in losing weight, too. A study has shown that people who eat almonds are less likely to gain weight than those who don’t. But the best benefit of almonds is that you can make your own almond cheese and milk and you can consume them with no feeling of guilt for your diet.
Let’s prepare almond cheese and milk! Fun, fun, fun!
- 2 cups of raw, unsalted peeled almonds*
- 4 cups cold water
- juice of 1 lemon
- 1 teaspoon of sea salt
- 4 tablespoons olive oil
*if you cannot find peeled almonds in a store, take off the peel yourself. The night before you make the cheese and the milk, put the almonds in water and put them in the fridge. When you are ready, just pour hot water over them and the peel falls off. Just like that!
Preparation method:
After you’ve peeled the almonds, put them with the cold water in a blender and blend until it becomes smooth and creamy. It has to be finely blended, with no visible bigger pieces of almond. Then put a cheesecloth over a bowl and pour the mixture in. Grab the cheesecloth carefully not to drop something, and squeeze it hard so all the liquid is drained. That liquid is your almond milk, you can drink it right away! THAT easy!
Next, place the cheesecloth with the mixture in it over another bowl and open it. Add the lemon, sea salt and olive oil and mix them, then close the cheesecloth again and squeeze again. Grab it and put it in a another container that has a lid, press on top of the mixture, then close the lid and leave it in the fridge for about an hour. And there you go, you have almond cheese! Now you can freely combine it with your favorite food and drink, just like regular cheese. It tastes great in pizzas, salads, sandwiches, toast… basically, it tastes good with everything!
Expiration date: The almond cheese is good up to one week, of course, stored in the fridge. The almond milk can be used 3 days, but you can freeze it and use it whenever you want.
