Garlic soup recipe
You need quite a few ingredients, but don’t worry; nothing too expensive.
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 2 large onions
- 3 cups stale bread
- 1 cup sour cream
- 1 tablespoon fresh thyme
- 6 cups chicken broth
- 50 garlic cloves
- Fresh herbs: oregano, parsley, bay leaf
- Salt
Method of preparation
First of all, cut all of the ingredients in teeny-tiny pieces, except for the garlic cloves. Next, preheat your oven on 180 degrees. Put the garlic cloves on a piece of aluminum foil and spray it with some olive oil. Let it roast for 1 and half hour.
In the meantime, put the butter and the olive oil in a pot. Add the onions and cook them until they become reddish. This is the time when you add the roasted garlic. Once everything is ready, mash it and add the herbs and the chicken broth.
Lower the heat and add bread. Cook the bread for a few minutes until it becomes soft. Then, remove it from the pot and put the whole mixture in a blender. Blend until it becomes really smooth and return it in the pot. Add the sour cream and salt, and cook it for 10 more minutes.
